F.O.O.D's

Post MARATHON...
This is my third entry after posted the second one just a few minutes before...
For this entry, let's we make it very special because I have to talk about F.O.O.D's.
Errmmm..seems like interesting entry..OK.
I want to share about 2 types of my favourite foods together with the recipe.

# F.O.O.D  1

[ MOIST CHOCOLATE CAKE ]


INGREDIENTS:

  • This is a dump and pour recipe:
  • 2 cups flour
  • 3/4 c cocoa
  • 1 1/2 tsp. baking powder
  • 1 cup milk
  • 1 tsp. vanillashopping list
  • 2 cup sugar
  • 2 tsp baking soda
  • 1/2 cup oil
  • 1 cup hot coffee
  • 2 eggs
  • pinch salt


HOW TO MAKE IT?




  • Beat all together. This will be very thin. Pour in greased baking pan. Cake pans or 9 x13 is what I usually use. OR IN ROUND CAKE PANS
  • bake 30 minutes @ 350. Do not overbake. . test before removing.
  • DO NOT OVER BAKE!!! OR IT WILL NOT HAVE THAT WONDERFUL MOISTNESS.
  • Top with your favorite buttercream or icing. Alot of times just Whip cream does it for us. My children who are now grown even love this with just powdered sugar. I Love it with buttercream or German Chocolate icing. Sometimes I make a Rasberry Buttercream.

# F.O.O.D  2

[ ARAB LAMB WITH RICE ]


INGREDIENTS:

3 cups rice
2 lbs (950gms) lamb leg and shoulder
1/2 cup corn oil
10 curry leaves
1 teaspoon turmeric
2 teaspoons bezar (pepper)
3 large onions
3 large tomatoes
2 tablespoons tomato paste
2 stock cubes
2 cloves garlic (crushed)
3 pieces cinnamon bark
3 whole dried loomi
2 tablespoons cleaned dried loomi(ripe limes boiled in salt water ) or 
1 lemon juicepinch clovessalt to taste





HOW TO MAKE IT?

- Wash and soak the rice for two hours. Drain it.


- Clean the meat and cut into 5cm (2") pieces. Boil until all froth has formed on top of the pan. Remove meat and discard water.


- Meanwhile, slice onions and chop tomatoes. Fry onion and tomatoes in the same pot in a little oil until brown, then add garlic, meat and all spices. Turn gently and keep frying for two to three minutes.


- Add remaining ingredients and add two cups water. Taste for salt at this stage and adjust seasonings if needed. Let the stew reach a good boiling stage and gently lift the rice with a spatula and add to the stew.


- Reduce heat to medium and leave to simmer for 10 minutes with the lid on.


- Remove lid, stir once, gently and reduce heat to lowest setting. Cover pan tightly with a damp cloth under the lid and don't open again.


- Let it steam gently for 20 minutes, then turn off heat. Serve hot.
